Grilling the perfect steak is a skill that takes time to refine. The balance of heat, timing, and technique can be tricky to get right, and small missteps—like an underheated grill or an early flip—can make all the difference. It’s a process of trial and adjustment, learning how different cuts respond to the fire and how to recognize the subtle signs of doneness.

The good news is, once you’ve mastered it, it becomes second nature. You develop an instinct for when to turn the steak, how to judge its temperature by touch, and when to let it rest. With practice, what once felt uncertain becomes effortless, and grilling a great steak becomes something you can do with quiet confidence. These six tips should be a help, too.

One of the most important steps in barbecuing, is to properly preheat your grill. Whether using charcoal, gas, or wood, taking the time to heat your grill for at least 15—20 minutes before cooking is crucial for achieving a professional-level sear and, crucially, ensuring your food doesn’t stick.

When barbecuing, marinating is key, a well-marinated steak enhances its natural flavour rather than overpowering it. At Gaucho we’ve recently introduced a range of new marinated steaks. For a bold, balanced taste, try recreating our Lomo al Diablo — a fillet cut infused with chilli, sweet paprika, garlic, and parsley. Allow at least four hours for the flavours to develop before grilling, ensuring depth and complexity in your grilled meat.

One of the most common mistakes is moving the meat too often. To develop a perfect crust, turn your steak only once, allowing 3-5 minutes per side, depending on thickness. Avoid pressing down on the meat, as this releases essential juices that contribute to tenderness.

4. Choose your moment to season

Coarse sea salt should be applied just before grilling to enhance the steak’s natural flavours without drawing out moisture prematurely. For a deeper infusion, salt the meat 30 minutes prior, allowing it to absorb fully before cooking.

Resting your steak for at least 5—10 minutes post-grill allows the juices to redistribute, ensuring a tender and flavourful bite. Cover loosely with foil to retain warmth without steaming the steak.

6. Maintain a clean grill

A well-maintained grill is essential for consistent cooking results. After each use, clean the grates thoroughly with a stiff brush while they are still warm to remove any residue. Before your next barbecue, wipe with a lightly oiled cloth to prevent sticking and ensure a flawless sear.
