Called the Soho burger, a thicker, heavier patty made from chuck, brisket, and rib cap will be topped with melted gruyère, sweet caramelised onion, thyme and peppery watercress, then combined with mustard mayo, tarragon and plenty of chopped cornichons. It will be served with a peppercorn sauce for dipping.
