Unsurprisingly, D’Sylva’s comments have sparked some outrage. Is he being arrogant and dismissive? He is pithy, but I can’t help but share his loathing of what he has dubbed the, “I’ll have what I want, when I want it” brigade. Those who are expectant and who treat hospitality professionals poorly, I wouldn’t want them in my restaurant either. And these people exist, make no mistake. Though Britain is something of a “food nation” today, all too often diners belittle service staff, conflating service with servitude, crying about prices and complaining, always complaining, in the hope of getting a free pudding.
